Bags of Water

Stephen Wood* of Poverty Lane Orchards in Lebanon, New Hampshire:
"For every apple, there's only so much flavor. If you grow it larger you dilute it. Those three-and-a-half-inch Gala apples that look like they should be on a new-car lot are bags of water."
